If you want to unpack/open/unfreeze and move a selected quantity(units, kg, lt) of an item to your fridge you need to select the product(by tapping on the category-colored bullets) and tap on the "Unpack" button on the top(the one looking like 4 stacked boxes). Use "Take", "Add to" and "Update expiry" controls to perform all changes.  Use the same button if you want to freeze some quantity.
